Healthy Sweet Potato Pie on the Fly

Sweet potatoes are a great choice for diabetics due to its high fiber content and ability to help stabilize blood sugar levels.

Sweet Potato Pie Time 1 h 30 m 8 servings 249 cals

Ingredients:

3-4 large sweet potatoes 1/2 cup butter (earth balance vegan butter), softened

2 tablespoons brown sugar 1 tablespoon cream cheese (daiya vegan cream cheese)

1/2 teaspoon cinnamon 1 teaspoon vanilla extract

1/2 teaspoon nutmeg 1 (9 inch) unbaked pie crust

Roasted nuts (optional)


Directions:

Prep 60 m | Cook 30 m | Ready In 1 h 30 m


1.) Bake sweet potatoes in skin at 400 degrees for 40-50 minutes, or until done. Set aside until cool, then peel.

2.) Lower oven temp to 350 degrees while preparing other ingredients.

3.) In large bowl, combine sweet potatoes, butter, and cream cheese with hand mixer or whisk for one to three minutes, or until desired consistency.

4.) Slowly add in brown sugar cinnamon, nutmeg and vanilla.

5.) Bake in the over for 25-35 minutes until brown.

6.) Let cool and top with roasted nuts (optional)
